New Favorite Muffin

Colin has been snacking on Vanilla Corn Muffins all weekend.  Delicious and easy recipe I must say.  Everyone in the family loved it.

Preheat your oven to 350ºF.
Line muffin tin with paper liners.

Whisk together the dry ingredients:
1 cup Bob's Red Mill corn flour
1 1/4 cup gluten free flour mix
1 cup organic light brown sugar
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon fine sea salt
1 teaspoon xanthan gum
Add in and stir:
2 eggs
1/2 cup organic canola oil
1 cup  warm water
1 tablespoon vanilla extract

Beat by hand until a smooth batter is formed, about one minute. Add up to 2 extra tablespoons of warm water, if needed, to thin. The batter should be like thick cake  or muffin batter- but not too stiff.
Pour the batter into the prepared muffin tin. 
Bake for about 15-20 minutes, or until firm and dry in the center and brown on top.

Place the pan on a wire rack to cool.

Eat with apple butter!  Yum!!
